Glazed Strawberry Tart

Glazed Strawberry Tart Shopping List:

1/3 cup sugar
3 ta1blespoons cornstarch
1/4 teaspoon salt
1/3 cup instant nonfat dry milk
1 1/2 cups milk
2 eggs, beaten
1/2 teaspoon grated lemon peel
1/2 teaspoon vanilla extract
1/4 cup white grape juice
1 baked 9-inch pie or tart shell
2 pints ripe strawberries, rinse, hulled, and thoroughly dried
1/3 cup currant jelly
1 tablespoon sugar

Glazed Strawberry Tart Preparation Instructions:

1. Combine 1/3 cup sugar with the cornstarch and salt in a heavy saucepan: mix well.
2. Blend the nonfat dry milk with the milk and stir into the cornstarch mixture until smooth. Bring mixture to boiling. stirring constantly; boil 2 to 3 minutes. continuing to stir.
3. Vigorously stir about 3 tablespoons of the hot mixture into the eggs: return to mixture in saucepan. Cook and stir over low heat about 3 minutes, or until very thick.
4. Remove from heat and stir in lemon peel and vanilla extract. Cool slightly. then beat in the white grape juice with a hand rotary or electric beater until blended.
5. Spread the cooled filling in the completely cooled baked pie shell and refrigerate until thoroughly chilled. Top with the strawberries: set aside.
6. Heat jelly until melted and continue to cook about 5 minutes. Spoon over strawberries on the tart filling. Just before serving. sprinkle remaining 1 tablespoon sugar over the tart.
