Fried Okra Pods

2 pounds large okra pods, washed and stems trimmed
Salt, pepper, and cayenne or red pepper to taste
1 egg yolk
1 tablespoon olive oil
1 cup dried bread crumbs
Oil for deep frying, heated to 365 °F
Watercress and wedges of avocado and tomato for garnish

1. Cook okra in lightly salted boiling water 7 minutes. Drain and season.
2. Roll them in egg yolk beaten with oil, then in bread crumbs.
3. Fry the pods in heated oil until golden and drain on absorbent paper.
4. Serve surrounded with watercress, avocado, and tomato.
