Fluffy Cheese Potatoes Shopping List:
6 medium-size (about 2 pounds) baking potatoes
1 tablespoon fat
2 ounces process Swiss cheese (about ½ cup, shredded)
4 tablespoons butter or margarine
½ cup hot milk or cream
¾ teaspoon salt
¼ teaspoon paprika
¼ teaspoon pepper
8 slices crisp, pan broiled bacon, crumbled
1 tablespoon finely chopped onion
Finely chopped parsley
Fluffy Cheese Potatoes Preparation Instructions:
1. Wash and scrub potatoes with a vegetable brush.
2. Dry potatoes with absorbent paper and rub with fat.
3. Place potatoes on rack in oven.
4. Bake at 425 °F 45 to 60 minutes, or until potatoes are soft when pressed with the fingers (protected by paper napkin).
5. While potatoes bake, shred cheese and set aside.
6. Remove potatoes from oven. To make each potato mealy, gently roll potatoes back and forth on a flat surface. Cut large potatoes into halves lengthwise or cut a thin lengthwise slice from each smaller potato. With a spoon. scoop out inside without breaking skin. Mash thoroughly or rice. Whip in, in order, butter or margarine, milk or cream (adding gradually) and a mixture of salt, paprika, and pepper until mixture is fluffy.
7. Mix in the shredded cheese and bacon and onion.
8. Pile mixture lightly into potato skins, leaving tops uneven.
9. Return potatoes to oven for 8 to 10 minutes, or until thoroughly heated.
10. Sprinkle with parsley.
