Florentine Spinach

2 pounds spinach
2 cups Medium White Sauce
3 eggs, slightly beaten
3 tablespoons minced onion
½ teaspoon salt
½ teaspoon pepper

1. Wash spinach. Put into a large saucepan with only the water clinging to the leaves; cover. Cook rapidly about 5 minutes, or until tender. Drain well.
2. Prepare white sauce. Pour hot sauce into beaten eggs, stirring vigorously to blend. Set aside to cool to lukewarm.
3. Finely chop spinach. Combine spinach, sauce mixture, onion, salt, and pepper. Turn into a thoroughly greased 9-inch ring mold.
4. Set filled mold in a pan and pour hot water into pan to a depth of 1 inch.
5. Bake at 350°F 45 to 55 minutes, or until set.
6. Remove from oven; remove mold from water and let stand 5 minutes. Loosen spinach from mold and unmold onto a warm serving plate.
