2 cups plain yogurt
1 scallion, chopped
1 teaspoon mint
1/2 teaspoon salt
Freshly ground pepper
Pinch dill
1 garlic clove, crushed in a garlic press
4 cucumbers, pared and thinly sliced
Mix yogurt with scallion, salt, pepper, dill, and garlic. Add cucumber and toss to coat with dressing. Refrigerate 1 hour.
