1 Corned brisket of beef (about 4 to 5 pounds)
Water
1 ½ quarts grapefruit juice
1 large onion studded with 12 whole cloves
8 peppercorns
1 celery stalk with leaves, cut in thirds
1 bay leaf
1 tablespoon caraway seed
1 green pepper, sliced
10 carrots, pared and halved
8 small white onions
4 baking potatoes, pared and halved
1 green cabbage, cut in quarters
Corned Beef in Grapefruit Juice Preparation Instructions:
1. Put corned beef into a heavy kettle. Add water to cover. Bring to boiling and cover tightly. Reduce heat and simmer 1 hour.
2. Pour off water and add grapefruit juice and water to cover. Add onion studded with cloves, peppercorns, celery. bay leaf, caraway seed, and green pepper. Bring to boiling; reduce heat and simmer, covered, 2 hour.
3. Add carrots. onions, and potatoes; cook 30 minutes.
4. Add cabbage and cook 30 minutes.
5. Serve meat and vegetables on a platter.
