Chicken Fritters Guadeloupe Shopping List:

2 cups minced cooked chicken
3 tablespoons finely chopped parsley
2 tablespoons finely chopped chives
3 tablespoons fresh bread crumbs
1 tablespoon grated onion
1 tablespoon curry powder
Salt to taste
¼ teaspoon cayenne or red pepper
¼ cup Dijon mustard
½ cup dry bread crumbs
1 egg, beaten with
1 teaspoon peanut oil
Oil for frying, heated to 365°F

Chicken Fritters Guadeloupe Preparing Instructions:

1. Mix chicken with parsley, chives, fresh bread crumbs, onion, and seasonings. Shape mixture into walnut-size balls, roll in dry bread crumbs, then in beaten egg, and again in bread crumbs. Chill in refrigerator.
2. Just before serving, fry in hot oil until golden brown. Drain on absorbent paper and serve hot.
