Cheese Tricorn Rolls Shopping List:
1 package active dry yeast
¼ cup warm water, 110° F to 115 °F (If using compressed yeast, soften 1 cake in ¼ cup lukewarm water, 80° F to 85° F)
¼ cup warm water
¾ cup sifted all-purpose flour
4 ounces sharp Cheddar cheese (about 1 cup, grated)
¼ cup plus 2 tablespoons shortening
1 tablespoon lemon juice
½ cup sugar
½ teaspoon salt
1 egg
1 egg white
2 ¼ cups sifted all-purpose flour
Melted butter or margarine
Cheese Tricorn Rolls Preparation Instructions:
1. Two baking sheets will be needed.
2. Soften yeast in ¼ cup warm water.
3. Set aside.
4. Meanwhile, pour ¼ cup warm water into a large bowl.
5. Blend in ¾ cup sifted all-purpose flour.
6. Stir softened yeast and add, mixing well. Beat until very smooth . Cover bowl with waxed paper and a clean towel and let stand in warm place (about 80° F) 1 ½ to 2 hours.
7. Meanwhile, grate cheese and set aside .
8. Cream shortening and lemon juice until blended.
9. Add gradually, creaming until fluffy after each addition, a mixture of sugar and salt.
10. Beat egg and egg white until thick.
11. Add beaten eggs in thirds to sugar mixture, beating thoroughly after each addition . Add yeast mixture , mixing well.
12. Measure 2¼ cups sifted all-purpose flour.
13. Add about one-half the flour to yeast mixture and beat until very smooth. Blend in grated cheese, mixing thoroughly. Beat in enough of the remaining flour to make a soft dough. Turn dough onto a lightly floured surface and allow it to rest 5 to 10 minutes.
14. Knead.
15. Shape dough into a smooth ball and put into a greased deep bowl. Turn dough to bring greased surface to top. Cover with waxed paper and a clean towel and let stand in a warm place (about 80° F) until dough is doubled .
16. Grease the baking sheets.
17. Punch dough down with fist. Turn out onto a lightly floured surface, cover and allow dough to rest 5 to 10 minutes.
18. Roll dough ¼ inch thick. Cut into 3-inch squares. Crease each square diagonally across center by pressing with handle of knife or wooden spoon. Fold squares on creases to form triangles; press edges to seal. Place rolls on baking sheets and brush tops with melted butter or margarine.
19. Cover rolls with waxed paper and towel and let rise again until doubled.
20. Bake at 350°F 40 to 45 minutes, or until golden brown .
