Carrot Apricot Tart Shopping List:
1 cup fresh or canned apricot halves, drained and cut into ¼-inch slices
1 pound baby carrots, cut in half lengthwise
½ teaspoon cinnamon
¼ cup carrot juice
2 eggs
½ cup instant nonfat dry milk solids
¼ cup water
1 tablespoon brandy
¼ tablespoon nutmeg
Carrot Apricot Tart Preparation Instructions:
1. Cover bottom of a 9-inch pie plate with apricots: arrange carrots in spoke design over apricots.
2. Mix remaining ingredients in a food processor or blender: pour over carrots.
3. Bake at 325° F about 45 minutes. or until set. Cool slightly. Cut into wedges to serve.
