Broiled Fish Quenelles

Broiled Fish Quenelles Shopping List:

2 pounds skinned fish fillets (all trout or a combination of trout, whitefish, or pike)
½ cup chopped onion
1/3 cup chopped carrot
1 egg, beaten
2 teaspoons vegetable oil
1 ½ teaspoons salt
1 ½ teaspoons matzo meal or white cornmeal
3 tablespoons ice water Watercress

Broiled Fish Quenelles Preparing Instructions:

1. Place all ingredients except 1 tablespoon of the ice water and watercress in a blender or food processor; puree until the consistency of a paste. Add remaining ice water if necessary (mixture should hold together and be easy to handle).
2. Form fish mixture into oval patties, using ½ cup for each. Place on a lightly oiled cookie sheet.
3. Broil 4 inches from heat until patties are well browned and slightly puffed (8 to 10 minutes on each side). Serve immediately. Garnish with watercress.
