Broccoli Salad Shopping List:
1 pound broccoli
3 tablespoons olive oil
3 tablespoons lemon juice
1 medium clove garlic
¼ teaspoon salt
¼ teaspoon pepper
Broccoli Salad Cooking Instructions:
1. Trim off leaves and bottoms of broccoli stalks, and split thick stems lengthwise. Cook, covered, in a small amount of salted water until just tender. Drain and chill.
2. Combine olive oil, lemon juice, garlic, salt, and pepper. Drizzle over thoroughly chilled broccoli and serve.
Cauliflower Salad: Follow recipe for Broccoli Salad. Substitute 1 medium head cauliflower for broccoli. Peel and dice 1 boiled potato; combine with cauliflower and chill. Substitute wine vinegar for the lemon juice and add 1/4 tea
spoon oregano.
Green Bean Salad: Follow recipe for Broccoli Salad. Clean and cook 1/2 pound green beans and substitute for broccoli. Use wine vinegar instead of lemon juice.
