3 cups all-purpose flour
Salt and pepper to taste
1 teaspoon paprika
Olive oil for frying
4 pounds beef top round, cut in slices ¼ inch thick or less
4 garlic cloves, crushed in a garlic press
1 cup red wine vinegar
1 ½ cups water
1 teaspoon sugar
1 bay leaf
¼ cup chopped parsley
1. Season flour with salt, pepper, and paprika.
2. Heat olive oil in a skillet. Lightly dip meat slices in flour. Shake off excess. Brown meat on each side in the olive oil. Arrange in a casserole.
3. Combine garlic, vinegar, water, sugar, bay leaf, and parsley in a small saucepan; heat to boiling. Pour over the meat.
4. Bake at 325°F 1 hour, or until the meat is tender and almost all the liquid is absorbed.
5. Serve with mashed potatoes.
