Boiled Curly Endive with Lemon Juice and Olive Oil

2 bunches young curly endive
3 cups water
1 teaspoon salt
1 lemon, cut in wedges, or use wine vinegar
Olive oil

1. Slice endive in half lengthwise. Rinse several times to remove all traces of dirt. Cut stem 1 inch from bottom and discard.
2. Boil the endive in water with salt added in a covered pot until tender (about 20 to 25 minutes).
3. Serve with lemon juice and olive oil.
