Beet Salad Shopping List:
1 16 ounce can sliced beets (about 2 cups, drained)
1/2 cup vinegar
1/4 cup reserved beet liquid
2 tablespoons sugar
1 1/2 teaspoons salt
1 teaspoon caraway seeds
1/4 teaspoon freshly ground pepper
Beet Salad Cooking Instructions:
1. Drain contents of can sliced beets, reserving liquid.
2. Place the beets into a 1-quart bowl and add a mixture of vinegar, beet liquid, sugar, salt, caraway seeds, and pepper.
3. Toss beets lightly in this salad marinade. Cover bowl and place into refrigerator to marinate 1 or 2 days; carefully turn beets occasionally.
4. Serve beets with some of the marinade.
