3 large ripe tomatoes
Salt
Freshly ground pepper
1 tablespoon vegetable oil
½ teaspoon sesame or walnut oil
2½ pounds lean beef sirloin steak, boneless, cut in paper-thin slices
2 bunches green onions, cut in ¾-inch pieces
1 tablespoon light soy sauce
2 tablespoons dry white wine
¼ teaspoon sugar
½ teaspoon salt
1. Slice each tomato into 4 slices horizontally. Sprinkle with salt and pepper. Bake on a cookie sheet at 325°F until hot (about 15 minutes).
2. Heat vegetable and sesame oils in a wok or skillet until hot but not smoking. Add meat, stirring to coat pieces. Cook 1 minute. Add green onions. Cook and stir 1 minute. Mix soy sauce, wine, sugar, and ½ teaspoon salt; pour over meat. Cook and stir until meat is done (about 3 minutes).
3. Overlap 2 tomato slices at the side of each serving plate. Arrange meat mixture on plates, partially covering tomatoes.

Note: Sesame and walnut oils can be purchased in specialty or gourmet shops. These oils have a delicate but distinct flavor which provides an interesting accent in this recipe. The oil can be omitted, or vegetable oil substituted.
